Chive Blossom Vinaigrette

Chives have more benefits than just using them as a fresh chive in your recipes.  How about making a vinaigrette with fresh blossoms?  Delicious!

Super simple to make:

1 cup fresh florets

1 cup white vinegar

Rinse florets and place in a glass jar with vinegar.  Cover the top with wax paper.  This will keep the metal from the lid from seeping into the vinaigrette.  Then place a lid over the wax paper.

Place in a dry dark place for 2 weeks.

Strain and serve.

It's very versitille - Add olive oil, lemon juice, salt & pepper or keep it simple.

Enjoy :)
